INGREDIENTS

(2) tbsp olive oil

(3) lbs beef stew meat (mutton is traditional if you want a more authentic flare)

(1) cup white onion, chopped

(1) tbsp minced garlic
-
1/4 cup all purpose flour
-
1 cup Guinness stout beer
-
(4) cups beef broth
-
1/4 cup tomato paste
-
(2) lbs small yellow potatoes, halved (quartered if they are on the larger size)

1/2 tsp dried thyme leaves
-
(2) cups carrots, cut in 1" pieces

(2) tbsp chopped parsley

DIRECTIONS

Light yourPit Barrel® Cookerh according to lighting instructions.

Using a dutch oven, add olive oil and meat to pan on the stove, brown all sides of the meat. Remove meat from pan and set aside.

Add onions to the same pan and cook on medium for 5 - 6 minutes. Add additional oil if necessary.

Add in chopped garlic and cook until fragrant, (approx. 30 seconds).

Add browned stew meat and flour to the pot. Stir until everything is coated with flour.

Add beer, broth, tomato paste, potatoes, thyme and carrots to Dutch oven; season with rub and stir together

Place dutch oven uncovered on your Pit Barrel® Cooker grates. Put the steel hanging rods in the appropriate holes and place lid on the Pit Barrel®. Smoke for 30 minutes.

After 30 minutes, replace the dutch oven lid (or cover dutch oven with foil) and cook for another 2 to 2.5 hours until meat and potatoes are fork tender; Stir occasionally.
