Wanting to enjoy the backyard cookout with your friends, but not so sure about the meat? Try this delicious alternative to the standard American Burger!

INGREDIENTS

  • 2 eggs (can also make flax egg for vegan substitute)

  • 3 cups black beans (drained and rinsed)

  • 1 cup walnuts (or other nut of choice)

  • 1 ½ cup cooked brown rice

  • 1 ½ cup carrots, shredded

  • ½ cup red onion

  • 1/2 cup green onions

  • 1.5 cups Ritz crackers (or breadcrumbs)

  • 2 tbsp smoked paprika

  • 1 tbsp chili powder

  • 2 tbsp onion salt

  • 2 tbsp dried parsley

  • Salt and pepper to taste

  • 4 tbsp mayo

DIRECTIONS

  1. Cook brown rice according to instructions on package. Let sit and cool while doing the next steps.

  2. Mash drained black beans to paste in a large bowl with a fork. Leave ¼ beans whole.

  3. Chop walnuts with a knife until smaller pieces (not powder) and add to bean mix.

  4. Add 2 eggs and mix. Shred carrots and mix all remaining ingredients, including rice).

  5. Freeze mixture for 30 min or refrigerate for 1 hour.

  6. Mix all ingredients for dressing and refrigerate.

  7. Light your Pit Barrel® following grilling instructions to get it nice and hot.

  8. Shape mixture into 12 patties.

  9. Brush patties with oil of choice and cook 5 min on each side.

  10. Serve with brioche buns and your favorite toppings.
